Ingredients
- 2 cups of vegetable broth
- A teaspoon of hoisin sauce
- Half a teaspoon of sesame oil
- A cup of uncooked quinoa grains
- A cup of black beans from a can washed, drained, and mashed
- Two large eggs
- A slice of bread
- Two tablespoons of water
- A small minced clove of garlic
- Half a teaspoon of salt
- A quarter teaspoon of freshly ground black pepper
- Three tablespoons of canola oil, or more if required
Step 1
In a saucepan, bring together vegetable broth, hoisin sauce, and a drizzle of sesame oil to a lively boil. Tumble in the fluffy quinoa and let it simmer gently until it becomes tender, typically around 20 minutes. Once ready, set it aside to cool for a moment.
Step 2
In a mixing bowl, combine the black beans, eggs, torn bread pieces, a splash of water, minced garlic, a pinch of salt, and a crack of pepper. Mingle all the ingredients vigorously until they form a cohesive mixture. Then, fold in about 1 1/2 cups of the cooked quinoa and blend thoroughly.
Step 3
Now, in a generously oiled skillet over medium-high heat, sculpt the burger patties using around 1/2 cup of the prepared mixture for each. Gently transfer them to the sizzling skillet and let them sizzle until they turn a beautiful golden hue, approximately 3 minutes on each side. Once done, let them rest on a paper towel-lined plate to absorb any excess oil.
Extra Tips & Suggestions
- 1. To keep your veggies and quinoa fresh and ready to use, store them in separate airtight containers in the fridge. This will help maintain their texture and flavor.
- 2. Prep your black beans ahead of time by cooking a large batch and freezing them in individual portions. This way, you can easily add them to your burgers whenever you need them.
