Ingredients
- 3 eggs of considerable size
- 2 egg yolks of notable size
- A quarter cup of water
- 1 teaspoon of sea salt
- 3 cups of all-purpose flour, or additional as necessary
- 2 cartons of chicken broth, each containing 32 ounces, or more if required
Step 1
In a mixing bowl, combine eggs, egg yolks, a dash of water, and a pinch of salt. Use an electric mixer to blend everything until well incorporated. Gradually incorporate 2 cups of flour into the mixture. Then, continue mixing in another cup of flour using a wooden spoon. Adjust the consistency by adding more flour until the dough reaches a thick, stir-able texture. Next, divide the dough into four equal portions.
Step 2
Prepare a pastry cloth and dust it generously with flour, along with a rolling pin and four sheets of waxed paper. Roll out each portion of dough on the pastry cloth until it reaches a thickness of 1/8 to 1/4 inch. Allow the dough to rest for 45 minutes. Carefully flip each piece of dough and let it rest for an additional 45 minutes.
Step 3
Stack the rolled-out dough pieces together and proceed to cut them into noodles. Leave the noodles to air dry for roughly 3 hours.
Step 4
In a large pot, bring chicken broth to a boil. Add the freshly made noodles and cook them uncovered until they are tender and the broth has thickened, which typically takes about 15 to 20 minutes.
