Divide the dough into eight equal portions and shape them into 2-inch diameter balls. Roll out each ball on a floured surface until it forms a 6-inch round. Sprinkle 1/4 cup of queso fresco on top of each circle. Cover the cheese with another tortilla and press the edges together firmly to encase the cheese within.

Preheat an ungreased skillet over medium-high heat. Cook each stuffed tortilla in the skillet one at a time until the cheese melts and the tortillas turn a golden brown color, around 2 minutes per side.
