Ingredients
- Softened salted butter, 2 tablespoons
- Minced garlic, 1 teaspoon
- Italian bread, 2 thick slices
- Divided olive oil, 1 ½ tablespoons or more as needed
- Freshly chopped spinach, 2 cups
- Drained giardiniera, ½ cup
- Mozzarella cheese, 2 slices
- Provolone cheese, 2 slices
- Asiago cheese, 2 slices
- Fontina cheese, 2 slices
- Roma tomato, cut lengthwise, 3 slices or more to taste
Step 1
Combine butter and minced garlic in a small bowl, ensuring they blend thoroughly. Proceed to generously spread half of this flavorful mixture onto one side of each bread slice, setting them aside for the moment.
Step 2
In a spacious skillet over medium-low heat, warm up a tablespoon of oil. Stir in a vibrant mix of spinach and giardiniera, allowing them to sauté until the spinach wilts and the entire combination is thoroughly heated, which typically takes around 3 to 5 minutes. Once done, transfer this delightful mixture to a bowl and gently clean the skillet.
Step 3
Now, it's time to assemble the sandwich. Begin by placing one slice of bread, the side with the butter facing down, onto one end of the warmed skillet. In the other side of the skillet, add half a tablespoon of oil. Proceed by arranging slices of mozzarella in the skillet, cooking them until they turn delightfully soft, usually within 1 to 2 minutes. Once the mozzarella slices are ready, carefully place them on top of the bread in the skillet. Repeat this process with the provolone, Asiago, and Fontina slices.
Step 4
Next, introduce the sautéed spinach mixture and tomato slices to the skillet, adding a touch more oil if needed. Let them heat through for about 2 to 3 minutes. Layer these warm elements on top of the cheese, followed by the tomatoes and the remaining bread slice, buttered-side facing upward. Flip the sandwich and cook it until both sides are beautifully browned and the cheese has melted to perfection, typically taking around 5 to 10 minutes.
Extra Tips & Suggestions
- 1. Keep your cheese fresh by storing it in a resealable bag with a small piece of bread to absorb moisture.
- 2. Store sliced cheese in a container with layers of parchment paper in between to prevent sticking.
