Ingredients
- 3 cups of sweet potatoes, peeled and cubed
- 2 tablespoons of extra-virgin olive oil
- 2 tablespoons of all-purpose flour
- 3 cups of low-fat chicken broth
- 2 tablespoons of brown sugar
- ½ cup of finely chopped white onion
- ½ teaspoon of ground turmeric
- ¼ teaspoon of ground cinnamon
- ⅛ teaspoon of ground cloves
- ⅛ teaspoon of red pepper flakes, if desired
- 2 cups of soy milk
- Salt to your liking
- 1 cup of cooked chicken, cubed, if desired
- 1 cup of canned carrots, sliced and drained, if desired

In a large pot, place sweet potatoes and cover them with salted water, allowing it to come to a boil. Let it simmer over medium-low heat until the sweet potatoes are tender when pierced with a fork, which usually takes about 10 minutes. Once done, drain the water.

Next, in a heavy pot over medium-low heat, combine olive oil with flour and stir continuously until a smooth paste forms, turning a lovely light caramel color. Add in broth and brown sugar, bringing the mixture to a boil before reducing the heat to a gentle simmer. Introduce the cooked sweet potatoes, along with onion, turmeric, cinnamon, cloves, and a touch of red pepper flakes. Let the flavors meld together by simmering for an additional 5 minutes.
Step 3
Afterward, remove the pot from the heat and allow the soup to cool slightly. Using a blender, fill it halfway with the soup, ensuring to hold the lid down with a potholder while pulsing a few times before blending thoroughly. Transfer the blended mixture into another pot and repeat this process until all the soup is blended.
Step 4
To the pureed soup, stir in soy milk and heat it through for about 5 to 10 minutes. Season with salt to taste, and for added texture, consider mixing in chicken and carrots.
