To begin, preheat your oven to a cozy 350 degrees Fahrenheit (175 degrees Celsius) and position a rack in the lower section for even baking. Give a mini muffin pan a light coat of cooking spray for easy removal later on.

In a mixing bowl, combine water with flaxseed meal, allowing it to sit for about 5 minutes to thicken and create a binding agent. While that's happening, in another bowl, whisk together the flour, oats, brown sugar, and a pinch of salt, setting this dry mix aside for now.

Next, in a separate large mixing bowl, blend the now-thickened flaxseed, ripe bananas, sweet honey, creamy yogurt, an egg, applesauce, melted coconut oil, and fragrant vanilla extract until well combined. Gently fold in the prepared flour mixture until just incorporated, then add in a generous handful of chocolate chips and chopped walnuts for extra texture and flavor.
