Ingredients

  • 3 tbsp of soy sauce
  • ¼ cup of pineapple juice
  • 3 tbsp of pineapple nectar
  • ¼ cup of spicy honey
  • 3 tbsp of fiery honey like Mike's Hot Honey®
  • 2 minced garlic cloves
  • 1 tbsp of brown sugar
  • ½ tsp of sea salt
  • ½ tsp of ginger powder
  • 2 tbsp of cornstarch
  • 1 pound of chicken thighs (skinless and boneless), sliced into strips
  • sprinkle of salt and freshly ground black pepper to suit your taste buds

Step 1

Mix soy sauce, pineapple juice, hot honey, garlic, brown sugar, salt, and ginger in a saucepan. Stir until fully blended. Heat over medium heat until the mixture starts to bubble, approximately 5 minutes. Lower the heat and slowly add cornstarch, stirring continuously until the sauce thickens, around 1 to 2 minutes. Remove the teriyaki sauce from the heat.

Prepare the chicken skewers. Season them with salt and pepper. Coat both sides generously with the teriyaki sauce, saving some for later. It's best to marinate the chicken for a minimum of 2 hours or leave it overnight for enhanced flavor.
