Ingredients
- Teriyaki Sauce:
- 3 tbsp of soy sauce
- ¼ cup of pineapple juice
- 3 tbsp of pineapple nectar
- ¼ cup of spicy honey
- 3 tbsp of fiery honey like Mike's Hot Honey®
- 2 minced garlic cloves
- 1 tbsp of brown sugar
- ½ tsp of sea salt
- ½ tsp of ginger powder
- 2 tbsp of cornstarch
- 1 pound of chicken thighs (skinless and boneless), sliced into strips
- sprinkle of salt and freshly ground black pepper to suit your taste buds
Step 1
Mix soy sauce, pineapple juice, hot honey, garlic, brown sugar, salt, and ginger in a saucepan. Stir until fully blended. Heat over medium heat until the mixture starts to bubble, approximately 5 minutes. Lower the heat and slowly add cornstarch, stirring continuously until the sauce thickens, around 1 to 2 minutes. Remove the teriyaki sauce from the heat.
Step 2
Prepare the chicken skewers. Season them with salt and pepper. Coat both sides generously with the teriyaki sauce, saving some for later. It's best to marinate the chicken for a minimum of 2 hours or leave it overnight for enhanced flavor.
Step 3
Preheat your oven to 400 degrees F (200 degrees C) and line a baking sheet with aluminum foil.
Step 4
Arrange the marinated chicken skewers on the baking sheet.
Step 5
Bake in the preheated oven for 10 to 13 minutes, then take it out.
Step 6
Adjust the oven rack to about 6 inches away from the broiler and preheat it. Brush the skewers with more teriyaki sauce and broil each side for 2 to 3 minutes. Serve with additional teriyaki sauce on the side for dipping.
