Ingredients
- 1. A generous amount of assorted berries, approximately one and a half cups
- 2. A splash of balsamic vinegar, around a quarter cup
- 3. Two spoonfuls of whiskey for a touch of warmth
- 4. Dijon mustard, two spoonfuls for a tangy kick
- 5. Freshly squeezed lemon juice, two spoonfuls to brighten the flavors
- 6. Golden honey, two spoonfuls to balance the sweetness
- 7. Brown sugar, two spoonfuls for a hint of caramelization
- 8. Finely chopped ginger, a spoonful to add a subtle heat
- 9. Shallot, finely minced for a delicate flavor, a spoonful
- 10. A pinch of cayenne pepper for a gentle spice
- 11. Four pieces of skinless, boneless chicken breast
- 12. A spoonful of oil for cooking
Step 1
Start by blending a delightful mix of berries, vinegar, whiskey, mustard, lemon juice, honey, brown sugar, ginger, shallot, and cayenne pepper until you achieve a smooth concoction.
Step 2
Next, prepare the chicken by placing it in a sealed bag along with half of the flavorful berry marinade. Let it marinate in the fridge for a minimum of 4 hours, or even better, overnight. Remember to keep the rest of the berry sauce aside for later use.
Step 3
When ready to cook, take out the marinated chicken from the refrigerator. Heat up a generous amount of oil in a large skillet over medium-high heat. Brown the chicken on both sides in the skillet, brushing it with the remaining marinade from time to time. Cook until the chicken is cooked through and the juices run clear, typically around 15 minutes. Once done, set the chicken aside to rest for a few minutes.
Step 4
Meanwhile, in a small saucepan, gently warm up the reserved berry sauce until it simmers beautifully over medium-low heat.
Step 5
To serve, slice the rested chicken into 1/2-inch slices and generously drizzle the warmed berry sauce on top for a burst of flavor.
Extra Tips & Suggestions
- 1. Use airtight glass containers to store leftover cooked chicken. This will help maintain its moisture and flavor.
- 2. Keep your mixed berries fresh by storing them in a breathable container lined with a paper towel to absorb excess moisture.
