- 3 lbs of boneless chicken without skin
- 2 tbsp of oil
- 3/4 cup of freshly squeezed orange juice
- An 8 oz can of tomato sauce
- 1/4 cup of granulated sugar
- 1/4 cup of rich blackstrap molasses
- 1/4 cup of soy sauce
- 4 cloves of minced garlic
- 1 whole orange, zested and juiced separately
- 1 tbsp of freshly grated ginger
- 1 tbsp of aromatic rice wine
- 3 tbsp of cornstarch
Step 1
Prepare the chicken by patting it dry with paper towels until all moisture is absorbed. Proceed to cut it into bite-sized chunks, approximately 1 to 2 inches in size.

To start cooking, activate your multi-functional pressure cooker, like the popular Instant Pot®. Opt for the Saute function and adjust it to the highest heat setting. Once the pot is hot, drizzle in some oil and wait until it shimmers. Add the chicken pieces and saute them until they develop a golden hue, ensuring you stir continuously to prevent sticking for about 2 to 3 minutes. Next, introduce 3/4 cup of refreshing orange juice into the mix, bringing it to a boil while scraping off all the flavorful browned bits from the bottom using a wooden spoon.
Step 3
Incorporate the tomato sauce, sugar, molasses, soy sauce, garlic, orange zest, ginger, and rice wine into the pot. Gently stir until everything is well-coated in the delectable sauce. Turn off the Saute function to move on to the next step.

Seal the lid securely and ensure the vent is closed before setting the pressure to high as per the manufacturer's guidelines. Set the timer for 5 minutes and allow some time, around 10 to 15 minutes, for the pressure to build up.

Let the Instant Pot® rest for an additional 10 minutes using the Keep Warm function. Release the pressure cautiously following the quick-release method, approximately 5 minutes, as per the manufacturer's instructions. Unlock and lift the lid, then switch the Saute function to the lowest setting.
Step 6
In a separate bowl, mix 3 tablespoons of freshly squeezed orange juice with cornstarch until a smooth consistency is achieved. Pour this mixture into the Instant Pot® and stir well to combine. Cook gently while stirring until the sauce thickens, typically taking around 3 minutes. Allow it to simmer for an extra 2 to 3 minutes.
Step 7
Turn off the Saute function and let the dish sit for 5 to 7 minutes to further thicken the sauce. Your flavorful creation is now ready to be served and enjoyed.
