Step 1
Enhance the flavor of the carrots, celery, and onion by generously sprinkling them with salt. Begin by heating a tablespoon of oil in a large soup pot over medium heat. Stir the vegetables until the onion turns translucent, which usually takes about 5 minutes. Create a space in the middle of the pot by pushing the vegetables to the sides. In that space, add another tablespoon of oil and sprinkle garam masala over it. Let it toast for 1 to 2 minutes before mixing it well with the vegetables.

Next, pour vegetable broth into the pot and bring it to a boil. Lower the heat to medium-low and introduce farro into the mix. Cover the pot and allow it to simmer until the farro is nearly tender, approximately 20 minutes. Then, include lentils into the pot. Cover it again and let it simmer, ensuring to add more broth if necessary, until both the farro and lentils reach a tender but firm texture, usually around 20 minutes more. Finally, season the dish with salt to taste.
