Step 1
Begin by placing the sun-dried tomatoes in a bowl and pouring boiling water over them. Allow them to soak for about 10 minutes until they become soft, then proceed to drain them.

Next, take the mustard seeds and cardamom seeds and crush them using a mortar and pestle. Heat up some ghee in a skillet over medium heat. Add the crushed spices along with onion, ginger, garlic, garam masala, turmeric, cinnamon, and cloves. Cook the mixture until it turns a light brown color, which should take around 3 to 5 minutes.

After that, incorporate the drained sun-dried tomatoes, chickpeas, carrots, and chile pepper into the skillet. Cook the mixture until everything reaches your desired level of tenderness, which should take approximately 30 minutes.

To finish off, stir in some yogurt and adjust the curry's consistency by adding broth if needed. This will help to enhance the flavors and create a delicious dish.
