Ingredients
- 2 ¼ cups of fresh, peeled potatoes cut into cubes
- A pound of lean ground beef
- A packet of savory taco seasoning mix (1 ounce)
- 3 tablespoons of your favorite vegetable oil
- Diced onion for flavor and texture
- Red bell pepper, also diced, for a pop of color
- Half a package (10 ounces) of sweet frozen corn
- 3 tablespoons of water to bring it all together
- 2 tablespoons of rich tomato paste
- A generous cup of shredded Emmentaler cheese
- 3 tablespoons of zesty taco sauce
- Butter, cut into pieces for added richness (2 tablespoons)
- Half a cup of creamy milk
- Season with salt and freshly ground black pepper to taste.
Step 1
In a large pot, place the potatoes and cover them with salted water. Bring the water to a boil and then reduce the heat to medium-low. Let the potatoes simmer until they are tender, which should take around 25 minutes.

While the potatoes are cooking, use a nonstick skillet to cook the ground beef over medium-high heat until it is browned and crumbly, which usually takes about 5 to 7 minutes. Once done, drain any excess grease and add taco seasoning to the meat. Stir well to coat the meat evenly and then set it aside.

To prepare for baking, preheat the oven to 400 degrees F (200 degrees C).

In a large skillet, heat some oil over medium heat. Add the onion and bell pepper, cooking them until they are slightly browned, approximately 5 minutes. Next, mix in the frozen corn, water, and tomato paste. Let the mixture simmer for about 3 minutes. Transfer this corn mixture to a shallow baking dish, spreading it evenly to cover the bottom. Then, top it with the seasoned meat.
Step 5
Once the potatoes are cooked, drain them, and mash them together with Emmentaler cheese, taco sauce, and butter. Add milk, salt, and pepper to the mashed potatoes, blending until smooth. Spread this potato mixture over the seasoned meat in the baking dish.

Bake the dish in the preheated oven until the potatoes start to brown, which should take approximately 30 minutes.
