Ingredients
- 3 tbsp of vegetable oil
- 2 green onions, sliced thinly
- 2 cloves of garlic, minced
- 1 garlic scape, chopped
- ½ lb of extra-firm tofu, cut into cubes
- ¼ cup of fermented black beans
- ¼ cup of oyster sauce made with mushrooms
- 1 cup of water
- 1 tbsp of rice vinegar
- 1 tbsp of tamari sauce
- ¼ tsp of ginger powder
- 2 cups of dried shiitake mushrooms
- ½ lb of freshly chopped spinach
Step 1
1. Begin by warming up a generous amount of vegetable oil in a wok or a large skillet set over medium-high heat.
Step 2
2. Toss in the fresh green onions, garlic, and garlic scape, and sauté them until they become tender and fragrant, which should take around half a minute.
Step 3
3. Next, introduce the toru, black beans, oyster mushroom sauce, and pour in part of the water.
Step 4
4. Cover the wok or skillet and allow the mixture to come to a delightful boil, letting it cook for about 3 minutes.
Step 5
5. After that, mix in the rest of the water, along with rice vinegar, tamari sauce, and freshly grated ginger for an extra kick of flavor.
Step 6
6. Gently place the mushrooms into the bubbling sauce, where they will soak up all the tasty juices while they cook.
Step 7
7. Finally, sprinkle a handful of fresh spinach on top, cover the pan once more, and reduce the heat to low.
Step 8
8. Let everything simmer together until the spinach wilts down and the mushrooms turn tender, which should take roughly 10 minutes.
