Ingredients
- 1/4 cup of coconut aminos, a flavorful soy-free seasoning sauce
- A fresh 2-inch piece of ginger, peeled and finely minced
- 3 cloves of garlic, minced
- 2 tablespoons of fragrant sesame oil
- 2 tablespoons of rice vinegar for a tangy kick
- 1 tablespoon of freshly chopped chives
- 1 teaspoon of salt to enhance the flavors
- 1/8 teaspoon of delicate white pepper
- 1 1/2 pounds of tender, boneless chicken breasts, cut into bite-sized pieces
- 2 tablespoons of vegetable oil for cooking
- 1/2 of an onion, quartered and separated into pieces
- 1 red bell pepper, cut into 1-inch pieces
- 1 green bell pepper, also cut into 1-inch pieces
- 1 can (20 ounces) of pineapple chunks in juice, drained with reserved juice
- 3/4 cup of savory chicken stock
- 2 tablespoons of arrowroot powder for thickening
- 2 cups of fluffy jasmine rice for serving, or more as needed
- 1/2 cup of coarsely chopped raw cashews for a crunchy finish (Optional)
Step 1
Mix together coconut aminos, zesty ginger, aromatic garlic, rich sesame oil, tangy rice vinegar, fresh chives, a pinch of salt, and a sprinkle of white pepper in a large resealable bag. Toss in the chicken to marinate and allow it to soak up the flavors while you get the veggies ready.
Step 2
In a spacious skillet or wok over medium-high heat, warm up some oil until it glistens. Throw in the onions and vibrant red and green bell peppers. Stir and cook until the veggies are just tender, about 2 to 3 minutes. Set the veggies aside once done.
Step 3
Next, add the marinated chicken to the same skillet and cook until it turns white and the juices run clear, roughly 5 minutes. Toss the cooked veggies and drained pineapple back into the mix and stir-fry for an additional 3 minutes.
Step 4
Now, pour in the reserved pineapple juice and quickly mix in some arrowroot powder until the sauce thickens and bubbles, around 2 minutes.
Step 5
Finally, serve this delightful dish over piping hot rice, and top it off with a generous sprinkle of chopped cashews for that extra crunch.
