Step 1
Begin by warming up some olive oil in a sturdy saucepan on medium-high heat. Let the oil get nice and hot before adding in the onion, allowing it to sizzle for around 3 minutes until it becomes beautifully fragrant. Next, mix in the garlic and sofrito with the onion, continuing to saute for an additional 3 minutes until the garlic releases its enticing aroma. Push this flavorful mixture to the side of the saucepan.

Now, it's time to break up the turkey into chunks and place it in the open space within the saucepan. Cook the turkey, stirring regularly, until it turns a lovely brown color and crumbles easily, which should take around 5 to 7 minutes.

Add in the tomatoes, water, and most of the tomato paste to the turkey mixture, stirring until everything is evenly combined. Toss in some cashews, chili powder, cumin, and a touch of cocoa powder. Stir everything together to infuse the flavors, then cover the saucepan with a lid. Lower the heat to medium-low and let it simmer, stirring occasionally and adding water to adjust the consistency as needed, until the tomatoes break down and meld flavors for about an hour. Season with salt and pepper to taste.
