- Two cans of refried beans, each with a weight of 16 ounces
- Two packets of taco seasoning mix (like McCormick® Original)
- A container of soft cream cheese weighing 16 ounces
- Two containers of pre-made guacamole, each weighing 7 ounces
- Eight flour tortillas measuring 10 inches, or more if required
- A variety of 72 paper cupcake liners in vibrant colors
- Fresh red chile peppers, deseeded and sliced thinly, in a quantity as desired
- Chopped green onions, along with two fresh red chile peppers
Step 1
Mix refried beans and taco seasoning in a bowl, ensuring they are well combined. In another bowl, soften cream cheese and blend in the guacamole until smooth.
Step 2
Spread 1/2 cup of the bean mixture evenly on a tortilla on a flat surface, then layer with 1/2 cup of the guacamole mix. Roll up the tortilla tightly and seal the edge with a bit of water. Wrap the rolled tortillas securely in plastic wrap and chill until firm, either for an hour or overnight.
Step 3
When ready to serve, unwrap the rolls and trim off any uneven edges. Cut each roll into 1-inch pieces. Place a piece in each cupcake liner and add a red pepper strip on one end as a decorative touch. Finish off by sprinkling chopped green onions over the appetizers.
