Ingredients
- Spray for cooking
- A couple of teaspoons of olive oil, or as desired
- Finely chopped half an onion
- Minced garlic cloves
- Two pounds of ground beef
- A packet of taco seasoning mix (1 ounce)
- Cooked rice, four cups
- Frozen vegetables in southwestern style (16 ounces)
- Kidney beans from a can, rinsed and drained (Optional)
- Sharp Cheddar cheese, shredded and divided (2 cups)
- Salsa (½ cup)
- Sliced Kalamata olives (¼ cup)
Step 1
To begin, preheat your oven to 350 degrees F (175 degrees C) and get your casserole dish ready by greasing it with cooking spray.
Step 2
In a skillet over medium-high heat, warm up some olive oil. Sauté the onion and garlic in the fragrant oil until the onion turns tender, which should take approximately 5 minutes. Next, add the ground beef and cook it while breaking it into small pieces using a wooden spoon until the beef is thoroughly browned, which typically takes 5 to 7 minutes. Flavor this beefy mixture with the taco seasoning mix.
Step 3
Combine the seasoned beef with rice, a variety of colorful vegetables, kidney beans, a cup of Cheddar cheese, salsa, and olives in the prepared casserole dish. Top this delightful mixture with the remaining cheese for an extra cheesy kick.
Step 4
Pop the casserole dish into the preheated oven and let it bake until the cheese melts and the dish is heated through in the middle, usually around 30 minutes. Enjoy this delicious and comforting meal straight from the oven!
