Ingredients
- 1.5 pounds of dried great Northern beans
- A single large onion, sliced into wedges
- Chopped salt pork, totaling 4 ounces
- Three-quarters of a cup of authentic maple syrup
- Quarter cup molasses
- Quarter cup brown sugar
- One teaspoon of ground ginger
- Mustard powder, amounting to one teaspoon
- Half a teaspoon of salt
- A quarter teaspoon of ground black pepper
- Two cups of boiling water
Step 1
Begin by immersing the dried beans in a generous pot of water overnight to soften them, then discard the water. Fill the pot anew with water and bring it to a bubbling boil. Let the beans simmer until they reach a tender consistency, which typically takes about an hour.
Step 2
During the beans' cooking time, concoct a flavorful blend by combining maple syrup, molasses, brown sugar, ginger, mustard powder, salt, pepper, and water in a mixing bowl. Keep this delectable mixture aside for later use.
Step 3
In a 3-quart or larger slow cooker, place the onion wedges at the base and layer the salt pork cubes on top of them. Once the beans are drained, transfer them into the slow cooker. Gently pour the maple syrup mixture over the beans. If the liquid doesn't sufficiently cover the beans, pour in a bit more hot water to ensure proper coverage.
Step 4
Cover the slow cooker and allow the dish to cook on the Low setting for a span of 10 to 12 hours, or opt for the High setting for a speedier 5 to 6 hours. If you opt for the High setting, remember to monitor the beans periodically to check if they require additional water. Should the beans appear too liquidy for your preference, leave the lid off during the final 30 minutes to allow excess moisture to evaporate.
