Ingredients
- Meatball Mix:
- Ground beef (1 pound)
- Italian-seasoned bread crumbs (¼ cup)
- An egg
- Minced onion (¼ cup)
- Minced garlic (2 cloves)
- Dried parsley (½ teaspoon)
- Sea salt (½ teaspoon)
- Cracked black pepper (½ teaspoon)
- All-purpose flour (¼ cup)
- Vegetable oil (1 tablespoon)
- Stew Ingredients:
- Baby carrots, thinly sliced (10 pieces)
- Chopped half of a large onion
- Fresh mushrooms, sliced (half of an 8-ounce package)
- Minced garlic (2 cloves)
- Red wine (1 cup)
- Beef broth (1 cup)
- Garlic and herb seasoning blend, like Mrs. Dash® (2 tablespoons)
- Dried thyme (1 teaspoon)
- Sea salt (1 teaspoon)
- Cracked black pepper (1 teaspoon)
- A bay leaf
Step 1
Combine ground beef with breadcrumbs, beaten egg, diced onion, minced garlic, freshly chopped parsley, salt, and pepper in a mixing bowl, ensuring all ingredients are well mixed. Form the mixture into fifteen 2-inch meatballs, shaping them with care. Next, prepare a coating by sprinkling flour onto a shallow dish and gently rolling each meatball in it until evenly coated.
Step 2
In a deep skillet, heat a drizzle of oil over medium heat. Carefully brown the meatballs on all sides, allowing them to cook partially for about 5 minutes. Once browned, transfer the meatballs from the skillet onto a plate and set them aside momentarily.
Step 3
Into the same skillet, add sliced carrots, more diced onion, sliced mushrooms, and minced garlic. Sauté these vegetables over medium heat, stirring frequently, for approximately 10 minutes. Introduce red wine, broth, a sprinkle of garlic and herb seasoning, sprigs of fresh thyme, a dash of salt and pepper, and a fragrant bay leaf into the skillet. Gently place the browned meatballs back into the mixture.
Step 4
Lower the heat to a simmer, cover the skillet, and allow the flavors to meld together beautifully for around 2 hours. This slow cooking process will infuse the dish with a rich depth of flavors, creating a hearty and satisfying meal.
