Ingredients
- 2 pounds of extra-lean ground beef
- 2 cups of crushed buttery round crackers or freshly made bread crumbs
- 2 large eggs, lightly whisked
- 1 finely chopped onion
- 1 jar of Crosse & Blackwell® Seafood Cocktail Sauce (12 ounces), portioned
- 1 teaspoon of salt
- ½ teaspoon of black pepper
- 4 slices of bacon
- 2 tablespoons of brown sugar
- ½ teaspoon of dry mustard
Step 1
Preheat the oven to 350 degrees Fahrenheit. In a spacious bowl, gently mix together ground beef, crushed crackers, eggs, diced onions, most of the cocktail sauce (save some for later), salt, and pepper until well combined. Press the mixture evenly into a 9x5-inch loaf pan. Top the meatloaf with strips of bacon for added flavor and texture.
Step 2
Bake the meatloaf for 50 minutes, giving you time to prepare a delicious sauce. In a separate small bowl, blend the reserved cocktail sauce, brown sugar, and dry mustard until smooth and well incorporated.
Step 3
After 50 minutes, take the meatloaf out of the oven and generously spread the sauce mixture on top. Return the meatloaf to the oven and bake for an extra 15 minutes until the top is nicely glazed. Once done, remove from the oven and serve the hot and savory meatloaf to enjoy a comforting meal.

- 1. Keep your ground meat fresh by storing it in a sealed container in the coldest part of your refrigerator. This will ensure the meat stays at a safe temperature until you're ready to use it in your meatloaf.
- 2. To prevent your meatloaf from sticking to the baking dish, line the bottom with parchment paper or aluminum foil before adding the mixture. This makes for easy removal and clean-up afterwards.
