Ingredients

  • Topping for Crumble:
  • A couple of tablespoons of all-purpose flour
  • A couple of tablespoons of wheat germ
  • A couple of tablespoons of brown sugar
  • A spoonful of canola oil
  • Batter for Muffins:
  • Two cups of all-purpose flour
  • A quarter cup of wheat germ
  • One teaspoon of baking powder
  • Half a teaspoon of baking soda
  • Half a teaspoon of ground cinnamon
  • A quarter teaspoon of salt
  • Two large beaten eggs
  • Two small containers of Mott's® Healthy Harvest Blueberry Delight Applesauce
  • Half a cup of brown sugar
  • A quarter cup of canola oil
  • A teaspoon of vanilla extract
  • A cup of blueberries

Step 1

Begin by preheating the oven to a toasty 350 degrees Fahrenheit. Prepare a dozen muffin cups by lightly greasing them or giving them a quick spray of nonstick cooking spray. These will be set aside for now. Let's start by creating a delightful topping - mix together flour, wheat germ, and brown sugar in a bowl. Add a splash of oil and stir until everything is nicely coated. Set this mixture to the side for later use.

Step 2

In a separate large bowl, whisk together flour, wheat germ, baking powder, baking soda, a hint of cinnamon, and a pinch of salt. In another bowl, blend together eggs, applesauce, brown sugar, oil, and vanilla until the mixture is smooth and well combined.

Step 3

Pour the liquid ingredients into the dry ingredients and gently mix until just moistened. Carefully fold in the blueberries. Spoon this lovely batter into the waiting muffin cups. Now, sprinkle the prepared topping evenly over the muffins, using the back of a spoon to gently press it into the batter.

Step 4

Pop the muffins into the oven and let them bake for around 20 to 22 minutes. Keep an eye on them - they're ready when the topping turns a beautiful golden hue and a toothpick inserted into the center comes out clean. Enjoy your freshly baked blueberry muffins!

Extra Tips & Suggestions

  1. 1. Keep your blueberries fresh by storing them in a breathable container in the refrigerator. This will help prevent them from getting mushy or moldy.
  2. 2. When storing your muffins, place a piece of parchment paper in between each one to prevent sticking and maintain their shape.
