Ingredients
- 1. One pound of tender calamari (both tubes and tentacles)
- 2. A tablespoon of vegetable oil
- 3. Half a teaspoon of red pepper flakes, with an additional pinch for a delightful garnish
- 4. Half a teaspoon of chipotle chili powder
- 5. A pinch of cayenne pepper for a subtle kick
- 6. A teaspoon of light brown sugar, carefully measured
- 7. A single jalapeno chili pepper, deseeded and thinly sliced
- 8. A teaspoon of kosher salt to enhance flavors
- Salad Foundation:
- 9. Four cups of delicate baby arugula, gently packed
- 10. A can of white beans (15 ounces), cooked, rinsed, and drained
- 11. Around a third cup of olive oil, and a bit more for a drizzle
- 12. Three tablespoons of freshly squeezed lemon juice, with extra for a finishing touch
- 13. Salt and freshly ground black pepper to elevate the taste.
Step 1
Prepare the calamari by slicing the tubes into 1/4-inch rings and halving the larger tentacle pieces. Place the calamari in a mixing bowl and add a drizzle of oil, a sprinkle of red pepper flakes, a dash of chipotle powder, a hint of cayenne pepper, a touch of brown sugar, some jalapeno slices, and a pinch of salt. Gently mix all the ingredients until well combined.
Step 2
In another bowl, combine fresh arugula and beans. Dress them with a generous pour of olive oil, a squeeze of fresh lemon juice, and a sprinkle of salt and pepper. Divide this vibrant mix evenly among four serving bowls.
Step 3
Meanwhile, heat a cast iron skillet over high heat until it starts to smoke. Quickly add the seasoned calamari to the skillet and stir-fry until it turns opaque, which should take around 2 minutes. Once cooked, promptly remove the skillet from the heat.
Step 4
To serve, spoon the flavorful calamari over the bed of arugula and beans. Drizzle with a bit more olive oil and lemon juice for an added burst of freshness. Finish off with a sprinkle of red pepper flakes to give it an extra kick. Enjoy this delightful and colorful dish!
