Ingredients
- 2 tablespoons of luscious butter
- 1 big yellow onion, finely chopped
- 2 tablespoons of minced garlic for that aromatic touch
- 4 cups of carrots, thinly sliced for a burst of color
- 4 cups of freshly sliced mushrooms, adding earthy flavors
- A generous 14 ounces of precooked brown rice, like the convenient Boil-in-Bag®
- 2 cups of vibrant tri-colored quinoa, also from Boil-in-Bag®
- 3 frozen skinless, boneless chicken breasts for a protein boost
- A sizable container of 48 ounces of nourishing chicken broth
- A dash of seasoned salt, like the renowned Lawry's®, about ½ tablespoon
- A hint of fiery red pepper flakes, around ½ tablespoon
- A sprinkle of dried parsley, approximately ½ tablespoon
- A touch of chili powder, just a teaspoon for a kick
- A pinch of salt and freshly ground black pepper to tantalize your taste buds
Step 1
Begin by setting a multi-functional pressure cooker, like Instant Pot®, to Saute mode and melting some butter. Saute onion and garlic in the butter until the onion softens, usually around 5 to 7 minutes. Next, add in the carrots, mushrooms, rice, and quinoa, creating a colorful and nutritious base for your dish. Gently place the frozen chicken on top of the mixture and pour in the chicken broth, along with seasoned salt, pepper flakes, parsley, and a touch of chili powder for added flavor.
Step 2
After this step, it's time to switch off the Saute function and securely close and seal the lid of the pressure cooker. Following the manufacturer's guidelines, set the cooker to high pressure and time it for 8 minutes, allowing some extra time for pressure to build, typically around 10 to 15 minutes.
Step 3
Once the cooking time is up, carefully release the pressure using the quick-release method, usually taking about 5 minutes. Open the lid and take out the chicken breasts, using two forks to shred the tender meat. Return the shredded chicken back to the pot, season the soup with salt and pepper to taste, and get ready to enjoy a comforting and hearty meal.
Extra Tips & Suggestions
- 1. Utilize Mason jars for individual portions of the soup. This not only makes it easy to grab and go, but also adds a rustic touch to your storage solutions.
- 2. Invest in reusable silicone food storage bags to portion out servings of the soup. These bags are not only eco-friendly, but also take up less space in your fridge or freezer.
- 3. Freeze the soup in ice cube trays for quick and easy portioning. Simply pop out a few cubes to thaw whenever you're in need of a comforting bowl of soup.
