Ingredients
- CRUST:
- A blend of 1 ½ cups of all-purpose flour, a tablespoon of Sugar In The Raw®, a tablespoon of Stevia In The Raw®, a pinch of fine sea salt, and 10 tablespoons of cold unsalted butter, meticulously cut into small cubes, awaits to be harmonized with a splash of ice water.
- FILLING:
- Embrace the flavors of 3 large Granny Smith apples, delicately cored and sliced 1/2-inch thick, mingling with 1 ½ cups of raw cranberries, a sprinkle of Sugar In The Raw®, a touch of Stevia In The Raw®, a dash of all-purpose flour, a hint of ground cinnamon, and a pinch of sea salt.
- STREUSEL:
- Prepare a tantalizing blend of ⅓ cup of all-purpose flour, 2 tablespoons of all-purpose flour, ⅓ cup of old-fashioned rolled oats, 3 tablespoons of Sugar In The Raw®, 2 tablespoons of Stevia In The Raw®, a teaspoon of ground cinnamon, a hint of ground nutmeg, a touch of ground cloves, a sprinkle of fine sea salt, 5 tablespoons of unsalted butter, softened to perfection, and a large egg, beautifully beaten.
Step 1
Mix together flour, sugar, stevia, and salt in a spacious bowl. Incorporate butter and work it into the flour using your fingers until the pieces are flattened, ranging in size from pea-sized to nickel-sized. Gradually pour in ice water while stirring continuously until the mixture reaches a moist consistency that holds together when pressed in your hand, ensuring it is neither sticky nor dry.
Step 2
Transfer the dough onto a countertop, briefly knead it to bring it together, then shape it into a disk and tightly wrap it in plastic wrap. Allow it to chill in the refrigerator for a minimum of 2 hours, or you can refrigerate it for up to 2 days.
Step 3
On a lightly floured countertop, roll out the dough into a 12-inch round. Gently place it in a 9-inch pie dish, pressing it down into the bottom. Trim off excess dough, leaving a 1-inch overhang, then fold the overhang back underneath itself to form a thick rim on the pie dish's edge.
Step 4
Create a decorative crimp on the crust rim by pressing one side with your thumb and the other side with your thumb and index finger. Refrigerate the crust while you prepare the filling and streusel.
Step 5
Preheat your oven to 375 degrees F.
Step 6
Combine apples, cranberries, sugar, stevia, flour, cinnamon, and salt in a large bowl. Transfer this mixture into the prepared crust and place it back in the refrigerator.
Step 7
In a separate medium-sized bowl, mix together 1/3 cup plus 2 tablespoons of flour, oats, sugar, stevia, cinnamon, nutmeg, cloves, and salt. Rub in the butter until the mixture is crumbly and well combined.
Step 8
Sprinkle the streusel over the pie filling. Position the pie dish on a large baking sheet and brush the crust rim with beaten egg. Bake the pie until it turns golden brown and starts bubbling, which usually takes about 1 hour.
Step 9
Allow the pie to cool entirely at room temperature before serving.
